Ingredients. 1 apple peeled, cored, cut into chunks. 1 cup pomegranate seeds. 1 cup plain Greek yogurt. Splash of skim soy, or almond milk. 4-6 ice cubes. Honey or agave syrup to taste (optional)

Preheat the oven to 425 F. Grease a 2-quart baking pan with ½ tablespoon butter. In a small saucepan over medium heat, reduce the pomegranate juice to ⅓ cup. Mix ½ cup granulated sugar.

Melt butter in a medium skillet over medium to medium low heat. Add the pecans, sugar, and cinnamon. Cook, stirring frequently, until the pecans start to toast. About 3-5 minutes. Transfer pecans to a piece of parchment paper to cool. Let cool completely before adding to the salad.
