Season the meats. Add chicken, bacon, and drizzle of oil to a bowl and add 2/3 of your rub mixture. Use your hands to massage the spices into the meats. Season the veggies/fruit. Add pepper, onion and pineapple to another bowl and toss with remaining 1/3 of the rub mixture. Assemble skewers.

Once well-coated, thread the chicken thigh pieces onto skewers (pre-soaked, if they're wooden). Place the kebabs on the preheated grill. Cook for about 5 minutes per side, or until nearly cooked through. Brush the kebabs with the bourbon barbecue sauce and cook for an additional minute on each side. Serve with the remaining BBQ sauce.

Mix the bacon puree and the chicken pieces in a bowl until thoroughly mixed together. Thread the chicken pieces onto the skewers. Baste with any leftover bacon puree. Grill the chicken skewers on a gas or charcoal grill for 5 minutes per side. Baste with additional bbq sauce and cook for 2-3 minutes more per side.

Instructions. In a medium bowl combine barbecue sauce, vinegar and whiskey. Whisk to combine. Set aside and allow flavors to meld. Add bacon to the bowl of your food processor and blend until bacon becomes a paste. Add salt, pepper, paprikas, and sugar. Pulse until well combined. Pat chicken with a paper towel to dry.

Combine chicken pieces with 1 cup or so of the BBQ sauce and marinate for 2-3 hours. (This step can skipped if you don't have time!) Microwave bacon for 2-5 minutes, depending on the thickness of your bacon. Let it cool slightly. Using wood skewers, thread chicken, bacon pieces, peppers, and pineapple, and then repeat.

You should definitely try these kebabs on the BBQ, because they are an absolute.
