This cardamom apple walnut pie is the perfect thing to make this time of year! I hope it finds its way onto your holiday table in one form or another. The flavors are inspired by my auntie Masy's cardamom walnut kleicha, which are kind of like mini walnut hand pies.

Preheat the oven at 375F. Butter a pie dish and roll the dough into 2 disks of 1/2 inch thick. Place one of the disks on top of the pie dish. Mix together the sugar, maple syrup (or sugar), cardamom, ground almonds, nutmeg, cinnamon. Set aside. Place 1/2 the spice mixture as a thin layer on the dough, then place 1/2 the apples.

Place the disc on a baking sheet lined with parchment paper. In a large bowl, add sliced apples, ground cinnamon, cardamom, and honey. Using a spoon mix all the ingredients. Line the apples up in the center of the pie crust disc, pour the juices leaving 1 1/2″ on the edges. Fold the edges over the top of the apple filling.

1 Peel, and then cut the apples in half. Remove the cores, and then slice apple halves into thin slices, about 1/4-inch thick. Place the apple slices into a very large bowl. 2 Scatter both sugars, salt, and spices over the apples, and then use your hands to toss them, coating the apple slices as much as possible.

For the filling: Preheat the oven to 375°F. In a large mixing bowl, toss together the apples, honey, cinnamon, cardamom, nutmeg, salt, 1/2 cup sugar, flour and apple juice. Make sure each apple is well coated. Set the bowl aside.

In a medium bowl combine eggs, 1/2 cup sugar, vanilla, cardamom, and salt. Gradually stir in hot cream mixture until combined. Place pastry shell on oven rack. Spoon apple mixture into pastry shell. Carefully pour egg mixture over apple mixture. Sprinkle with nutmeg. Cover edge of pie loosely with foil. Bake for 25 minutes.
