This vintage recipe uses fresh sweet corn and a few ingredients to create what is basically a corn fritter, although someone thought they looked like fried o.


Corn Oysters

Corn and Oyster Casserole. 2 c. cream-style corn 1/2 c. crax crumbs 1/4 c. milk 1 c. oysters, drained. Mix 1 can corn with crax crumbs + milk. Spread in 8×8″ baking dish. Beat the eggs in a medium bowl. Add the oysters to the eggs and set aside for 10 minutes. Meanwhile, heat 3 inches of vegetable oil in a heavy, deep saucepan over medium-high heat until it registers 370 F on a kitchen thermometer. In another medium bowl, combine the cornmeal, flour, salt, pepper, and sugar.

Pour the buttermilk into a medium-sized bowl and dunk the drained oysters. Let them marinate for 15 to 20 minutes. Place the cornmeal, flour, creole seasoning, and salt in a shallow bowl or pie plate and whisk to combine. Remove the oysters from the buttermilk one at a time and dredge them in the cornmeal mixture.

Corn Oysters are also mentioned in a much earlier cookbook from 1819 titled " The Hammond Harwood House Cookbook ". Some of the early renditions of the recipe we are making today used Green corn, which would resemble the taste of oysters. That's why some of these recipes are called Mock Oysters, Corn Oysters, or Summer Oysters!
