In a bowl, dissolve lime jello and salt in 2 cups of hot water (don't use boiling water, just regular hot water). Add 2 cups cold water. Chill until slightly thickened - the consistency of egg whites, about 30 minutes. In a separate bowl mix cucumber, horseradish, grated onion, and vinegar. Fold pineapple and cucumber mixture into jello.

Boil 2 cups water in a pot on the stove. Add the two boxes of jello and the unflavored gelatin powder to a large heat-proof mixing bowl. Add the boiling water to the bowl and stir until jello is completely dissolved. Add two cups of ice cubes to the jello mixture and stir until the ice melts enough to cool the liquid.

Pour into pot and bring just to a boil. Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved.

Instructions. Place the lime jello into a large mixing bowl and pour the boiling water on top. Whisk the two ingredients together quickly until all the powdered jello has fully dissolved. Stir in the crushed pineapple (don't drain) and place the bowl in the fridge for no more than 20 minutes to cool and slightly firm.

Step 1 - Using a stand mixer (or a hand mixer + large bowl ), whip the softened cream cheese and the powdered lime jello on medium-high speed until thoroughly mixed. Remove the bowl from the mixer. Step 2 - Boil some water and pour it into the bowl with the cream cheese and jello.

Grate carrots to equal 1/2 cup. Add both to an 8 x 8 square dish. Drain crushed pineapple, reserving liquid in a measuring cup. Add ice to the juice so it will equal exactly one cup. Set aside. In a small pan on low heat, heat one cup water. Add jello to dissolve and turn off heat. Add the pineapple juice/ice to the pan and stir until ice melts.

Whisk until the gelatin is dissolved. 1 package Lime gelatin, 1 cup hot water. Let the jello sit at room temperature for about 15 minutes. Mix in the cottage cheese and mayonnaise until thoroughly combined. 1/2 cup cottage cheese, 1/2 cup mayonnaise. Stir the pineapple and chopped nuts into the cottage cheese mixture.

Pour into a mold and chill until set: Add mixture to a jello mold. Set in the refrigerator until firm, several hours. To unmold, dip the bottom of the pan in hot water for about 5 seconds. Invert onto a serving platter, and shake firmly to release. Slice to serve.
