When you describe a Perloo to someone most instantly think jambalaya. While a cousin, a Perloo is meant to be simple. Often made with okra and some type of cubed pork, like bacon or Tasso ham and then of course Carolina Golden Rice. Method: Heat the oven to 400˚F. Place a heavy bottomed 3-quart pot over medium heat. Add enough oil to the pot to barely coat the bottom. Once the oil is hot add the onion, pepper, and celery. What Is Perloo? Many of us associate perloo with the Lowcountry cuisine found around Charleston and Savannah. Like many of the dishes created there, and the cooks with the expertise to have created them, perloo has West African roots.
