Huckleberry or Blueberry Crisp Recipe Leite's Culinaria

Preheat oven to 375 degrees. Generously butter a 13x9x2 inch baking dish. In a medium mixing bowl, combine flour, sugar and cinnamon. With a pastry cutter or fingertips, work in the butter until mixture resembles course meal. Arrange an even layer of huckleberries in a prepared dish. Sprinkle crumb mixture over berries.

Huckleberries are small wild berries similar to blueberries, and they are delicious. And hard to find. It's a little early yet for them to be in season but I was overjoyed to find some ripe and ready for the picking. Pretty soon we were all spread out from the trail, picking all we could find.

Preheat the oven to 400°F. Butter an 8×8 baking pan, and set aside. Mix the peaches, granulated sugar, 2 tablespoons flour, cornstarch, 1 teaspoon cinnamon and salt together in a large bowl until well combined. Pour the peach mixture onto the prepared pan and set aside.

Refrigerate. Preheat oven to 375 degrees F. Drain the peaches, reserving the peach juice, and placing the peaches in a large bowl. Measure out ¼ cup of the peach juice and add it to a small bowl (you can discard the rest, or drink it because it's delicious!). Stir in the flour, lemon juice, vanilla, salt, and cinnamon.

Preheat oven to 350°F. Butter 8x8x2 1/2-inch square baking dish. Toss fruit, sugar and 2 tablespoons flour in large bowl to combine. Transfer to prepared baking dish. Bake fruit until juices.
