St. Joseph's Day, March 19th, is during lent, so no meat is served. There are plenty of vegetarian dishes, breads and traditional Italian pastries such as Sfingi, Cannoli and Zeppole. I tried to get this recipe out before St. Joseph's Day, but unfortunately I was too busy to do so. The original Sfingi recipe is from my cousin Josephine.

Spread dough for cooling. Let it rest for about 10 minutes. Take the cooled dough and put into a bowl. Add the 4 egg, mixing in one egg at a time. Beat with a hand mixer until you have a very smooth mix. Heat 2 inches of oil in a pot. Bring to 325 degrees. Using a large soup spoon, place spoonful size of dough into the oil.

Once boiling, add 1 1/4 cups (160g) of all-purpose flour and stir with a spatula until all the flour is incorporated. (Photo #2) Continue to stir until the mixture forms a ball, about 2 minutes. (Photo #3) Remove the pan from the heat and use a spatula to move the dough around to cool it down.

Preheat oven to 400°F. In a pot over medium heat, bring butter, sugar, and water to a rolling boil. Next, remove pot from the heat, add all of the flour at once, and vigorously stir until it forms a ball. Add eggs one at a time then stirring until each egg is thoroughly incorporated.

Make a batch of Italian Pastry Cream before starting the zeppole (instructions in the recipe card below). Pre-heat the oven to 190C (375F). Line a large baking tray with parchment paper. Step 1) Heat the water and sugar until the sugar has dissolved then add the butter and salt.
